Chicken Salad (with grapes!)


It's been a long time since I've shared a recipe, and even longer since I've shared a recipe that wasn't a dessert but I felt compelled to share this one because it's a good one to have in your arsenal for spring/summer. 

I've shared another chicken salad recipe in the past but this one is entirely different. My sister introduced me to it after she found this pin. Like I often do, she altered the recipe and I love the chicken salad her way. Although I'm sure the dried cherries or even dried cranberries would be really good in this version too! 

Here's the recipe we used: 

1 pound of chicken (I diced mine but you could shred it instead if you like)
1 cup of celery, chopped 
1/2 cup of diced red onion 
1 cup of diced red grapes (seedless of course!)
1 cup of mayonnaise
1/2 teaspoon of salt
1/2 teaspoon of pepper 


Mix everything together and enjoy with crackers or in a sandwich. Either way is delicious! I love eating mine with these cracked pepper and olive oil triscuits. So good!
